Beets, Brussels and Butternut with Goat Cheese & Walnuts

Introduction
A warming and grounding meal perfect for an Autumn dinner.

Steps
Pre-heat oven to 375 degrees.
In cast iron pan (or fry pan that can go in the oven), sauté onion in ghee with salt and black pepper for 3-5 minutes.
Move onions off to one side.
Add beets and sprinkle with cardamom.
Add butternut squash and sprinkle with cinnamon.
Add brussel sprouts.
Place in oven for 25 minutes.
While cooking, mix lemon juice and honey.
Serve warm topped with walnuts, goat cheese and honey lemon sauce.

Vidalia Onion, 1 small
Butternut Squash, 1 -2 cups
Beets, 1-2 cups
Brussel Sprouts, 1-2 cups
Pink Himalayan Salt
Black Pepper
Cardamom
Cinnamon
Walnuts, handful
Goat Cheese, 4 T.
Lemon juice, 1 lemon juiced
Honey, 2 T.
