Veggie Pesto Soba Noodle Bowl

Steps

  • Make pesto sauce. Put all ingredients into a blender and pulverize until smooth. Set aside.

  • Cook soba noodles as directed, drain and set aside.

  • Sautee vegetables in ghee for 7-10 minutes or until tender.

  • Cover soba noodles with Pesto sauce and stir in. You will likely have extra pesto for another dish. Serve with vegetables on the top or side of noodles.

Pesto sauce ingredients:

  • 1 cup OLIVE OIL

  • 3 long GARLIC SCAPES

  • ½ cup fresh BASIL LEAVES

  • 2 T. APPLE CIDER VINEGAR

  • 1 LIME, juice from it

  • 1/8 cup NUTITIONAL YEAST

  • 1/2 cup PINE NUTS


Remaining ingredients:

  • Soba Noodles

  • 1 cup BROCCOLI

  • 1 cup BOK CHOY

  • 1 cup BEET GREENS

  • 2 T. GHEE
