Golden Delicata Breakfast Hash with Lemon-Ghee Spinach & Avocado

Ingredients
For the Hash
1 medium delicata squash, halved, seeded, and diced
1 leek, sliced (white + light green)
1–2 ribs celery, chopped
1–2 tbsp ghee
½ tsp turmeric
½ tsp ginger powder
¼–½ tsp cinnamon
½ tsp dried or fresh rosemary
½ tsp dried or fresh thyme
Pink Himalayan Salt + freshly ground black pepper, to taste
For the Egg & Greens
1–2 eggs
2 large handfuls fresh spinach
1 tsp ghee
Squeeze of fresh lemon juice
Lemon zest (a few small strands — powerful!)
¼–½ avocado, sliced
Optional garnish:
Extra thyme
Extra lemon zest
Light drizzle of balsamic reduction (as your base layer)

Instructions
1. Prepare the base (optional but magical)
Drizzle balsamic reduction across your plate in thin ribbons. Sprinkle with fresh thyme and a touch of lemon zest. Set aside — the visual beauty begins digestion.
2. Roast the hash
Preheat oven to 375°F.
Add delicata, leeks, and celery to a cast iron skillet. Coat generously with melted ghee. Season with turmeric, ginger, cinnamon, rosemary, thyme, PHS, and black pepper.
Roast for 20–25 minutes, stirring once, until golden, fragrant, and tender.
3. Add the egg
Make a small well in the center of the roasted vegetables. Crack the egg directly into the pan. Return to the oven and bake until the egg is set to your liking(soft yolk recommended for the natural “sauce”).
4. Wilt the spinach
In a small skillet, warm 1 tsp ghee. Add spinach and sauté just until wilted (30–60 seconds).Finish with a bright squeeze of lemon.
5. Assemble
Place the lemon-ghee spinach onto your prepared plate. Spoon the roasted delicata hash around and over the greens. Top with the baked egg. Add sliced avocado, a sprinkle of thyme, and a few tiny strands of lemon zest.
6. Serve immediately
Eat while warm, allowing the egg yolk, lemon, and spices to mingle into the perfect nourishing sauce.

The delicata squash roasted unbelievably soft and naturally sweet, melting into the warmth of turmeric, ginger, cinnamon, rosemary, and thyme. Each bite felt grounding — like the body takes a long exhale the moment it tastes it.
