Ingredients
Roasted Vegetables
1 small celeriac root, peeled and cubed (about 2 cups)
2 medium carrots, peeled and sliced
2 small beets, peeled and cubed
1 ½ tbsp ghee
¼ cup fresh chopped Fennel tops or 1/2 tsp whole fennel seeds (lightly crushed or left whole)
¼ tsp ground cinnamon
2 pinches ground cardamom
PHS (Pink Himalayan Salt) and cracked black pepper, to taste

Salad Base & Toppings
2 cups arugula (or arugula + baby spinach mix)
½ large avocado, sliced
1 tbsp pumpkin seeds, toasted
½ lime, for squeezing
Dressing
1 tbsp tahini
1 tsp lemon juice
1 tsp honey
1–2 tbsp warm water (to thin)

Directions
Preheat oven to 400°F (200°C).
In a cast iron, toss celeriac, carrots, and beets with ghee, fennel, cinnamon, cardamom, PHS, and black pepper.
Roast for 30–35 minutes, stirring halfway, until tender and golden around the edges.
Meanwhile, whisk dressing ingredients until smooth and creamy.
Divide arugula between two bowls. Top with warm roasted vegetables, avocado slices, and toasted pumpkin seeds.
Drizzle with dressing and finish with a squeeze of lime.
