Roast at 400°F until done; time varies by size and thickness

Ingredients
Salmon fillets (quantity according to servings)
Butternut squash, peeled, seeded and cut into roasting pieces
Green pepper, sliced or chopped
Fresh ginger, grated or finely chopped, for both salmon and vegetables
Ghee, enough to coat the salmon and vegetables
Jaggery, to taste, for the salmon and vegetable roast, plus a little more to finish the salmon
Cardamom, salt and black pepper, to taste
Fresh arugula, to serve
For the sauce: olive oil, jaggery, fresh ginger and freshly squeezed lemon juice, balanced to taste
Instructions
Preheat the oven to 400°F. Toss butternut squash and green pepper with ghee, fresh ginger, jaggery, cardamom, salt and black pepper. Spread in an oven-safe roasting pan or cast-iron skillet.
Roast at 400°F until the squash is tender and the edges become golden and caramelized, turning as needed. Timing depends on the size of the pieces.
Season the salmon with ghee, fresh ginger, jaggery, salt, black pepper and a little cardamom. Roast in the 400°F oven, using a separate oven-safe skillet or pan as needed, until nearly cooked through.
Add a little more jaggery on top of the salmon and finish briefly under the broiler to caramelize. Watch closely: jaggery can scorch quickly. Cook salmon to a safe internal temperature of 145°F.
Stir together olive oil, jaggery, fresh ginger and lemon juice for a bright sweet-tart finishing sauce. Adjust to taste.
Serve the salmon with the roasted squash and peppers and fresh arugula. Spoon the lemon-ginger-jaggery sauce over the plate.
A cozy autumn dinner built from simple ingredients: salmon, butternut squash, green pepper and fresh ginger gifted by a friend. Everything roasts at 400°F with ghee, jaggery and cardamom. A final touch of jaggery caramelizes on the salmon under the broiler, while an olive oil, ginger, jaggery and lemon sauce brings brightness to the whole plate.
This was a cook-by-feel creation rather than a measured recipe—adjust the amounts to your taste and the number of people at your table.

Ayurvedic Perspective
Sweet roasted squash, ghee and jaggery offer grounding, rich qualities especially appealing in cool autumn weather. Ginger and cardamom contribute aromatic pungency; arugula adds bitter and peppery contrast; lemon offers sour brightness. Individual portions and digestive tolerance still matter.
