
Cast-Iron Apple Crisp with Jaggery, Ginger & Walnuts
A cozy cast-iron apple crisp made with mixed orchard apples, fresh ginger, cardamom, walnuts and a buttery jaggery-oat topping.

Apple Filling
5 cups sliced apples (a mix of McIntosh, Honeycrisp, and Macoun is lovely)
2 tablespoons cane sugar
Instructions
Heat the oven to 350°F. Butter an 8-inch round cast-iron skillet and set it on a rimmed baking sheet.
Toss the sliced apples with cane sugar, lemon juice, flour, cinnamon, fresh ginger, cardamom, and salt. Spread them evenly in the skillet.
Apples picked with my daughter and grandchildren became this warm, fragrant crisp. A mix of McIntosh, Honeycrisp, and Macoun apples bakes beneath a buttery oat and walnut topping, where jaggery melts into little pockets of caramel-like sweetness.
It is especially lovely served warm with a spoonful of homemade whipped cream.
