Ginger-Cardamom Pear Compote with Jaggery

A warm, chunky pear compote gently cooked with jaggery, fresh ginger, cardamom, coriander and lemon. Spoon it into oatmeal for an easy, fragrant fall breakfast.

Ingredients

  • 6 large pears, peeled, cored and chopped

  • 1/4 cup jaggery

  • 1 tablespoon freshly grated ginger

  • 1 teaspoon cardamom

  • 1 teaspoon coriander

  • Juice of 1 large lemon

  • 1/4 cup water

Instructions

  1. Combine the chopped pears, jaggery, fresh ginger, cardamom, coriander, lemon juice and water in a medium saucepan.

  2. Set the saucepan over low-medium heat. Cook for about 40 minutes, stirring frequently so the fruit cooks evenly and does not catch on the bottom.

  3. As the pears soften, gently break up some of the pieces with the spoon while leaving plenty of tender chunks.

  4. Continue cooking until the liquid has reduced and the pears are soft, golden and spoonable, with a loose, syrupy compote consistency.

  5. Let the compote cool slightly, then transfer it to a pint Mason jar. Refrigerate and spoon into warm oatmeal as desired.

What began as an idea for pear jam became something even more useful: a warm, spoonable breakfast compote with tender pieces of pear and a lightly syrupy finish.


Jaggery gives the fruit a deep caramel note, while fresh ginger, cardamom and coriander create gentle aromatic warmth. Lemon keeps everything bright. Stir a spoonful into hot oatmeal for an easy layer of fall flavor.
