Soft-Boiled Eggs with Spiced Spring Greens

Soft-boiled eggs rest over warm asparagus, spinach and sweet onion sautéed with ghee and lively spring spices. Finished with creamy avocado and fresh lime, this colorful meal balances springtime lightness with enough grounding nourishment to make breakfast or lunch feel truly satisfying.

INGREDIENTS
  • 2 large eggs

  • 1 tablespoon ghee

INSTRUCTIONS
  1. Soft-boil the eggs. Bring a small saucepan of water to a rolling boil. Using a spoon, gently lower the eggs into the water and cook for 7 minutes.

  2. Transfer the eggs immediately to an ice bath and let them rest for 2 minutes. Peel carefully and set aside.

Ayurvedic & Western Perspective
In Ayurveda, spring is governed by Kapha’s cool, damp and heavy qualities, making warm meals with pungent, bitter and astringent tastes especially welcome. Asparagus and spinach bring seasonal lightness, while ginger, pepper and cardamom awaken agni and enliven the meal. Soft-boiled eggs, ghee and avocado provide grounding nourishment so the dish does not feel overly light or drying. Lime adds a bright sour finish, although it can be reduced along with the warming spices when Pitta is elevated.
