Garlic Scapes: The Brief and Beautiful Gift of Early Summer
Garlic scapes are one of the great joys of early summer. Harvested from hardneck garlic before the plant flowers, these curling green stems capture much of garlic's flavor while offering a gentler, fresher, and slightly sweeter personality. Their pungent and subtly sweet taste, combined with light and sharp qualities, helps stimulate digestion, awaken appetite, and bring movement to heavier meals.
Like garlic itself, garlic scapes are particularly balancing for excess Kapha, helping to clear stagnation and support digestive fire. Their warming nature can also support cold, sluggish forms of Vata when cooked with healthy fats and nourishing foods. However, because they carry a natural pungency and heat, excessive use may aggravate Pitta, especially during very hot weather or in those already experiencing signs of excess heat.
One of the reasons garlic scapes are so beloved is their versatility. They can be sautéed, roasted, grilled, blended into pestos, stirred into soups, folded into egg dishes, or added to grain bowls. Their flavor mellows beautifully with cooking, becoming rich and savory without the intensity of raw garlic cloves.

Garlic scapes are one of the harvests I look forward to most each year. Their season is short, which somehow makes them feel even more precious. I love sautéing them into almost anything—eggs, soups, grain bowls, vegetables, or simple stir-fries. When abundance arrives, I chop and dehydrate into garlic scape powder, which becomes one of my favorite seasonings for soups, roasted vegetables, and cozy winter meals.
Storage
Fresh garlic scapes store remarkably well.
For best freshness:
Store unwashed in the refrigerator
Place in a produce drawer or loosely wrapped bag
Avoid excess moisture
Garlic scapes often remain fresh for 2–3 weeks when properly stored.
If they begin softening slightly, they are still excellent for cooking, soups, or preservation.
