Chard & Radish Omelet with Mozzarella and Oregano
This savory omelet combines tender chard, sweet sautéed radishes, green onions, fresh mozzarella, and digestive spices for a nourishing breakfast or light meal. Rich in protein, minerals, and flavor, it is a simple way to enjoy seasonal vegetables while supporting digestion and sustained energy.

Ingredients
3-4 eggs
3 tablespoons ghee, or more as needed
2 green onions, sliced
1 cup chopped chard, leaves and tender stems
2–3 radishes, sliced
¼ teaspoon ground coriander
¼ teaspoon ground cumin
Pinch of black pepper
Pink Himalayan salt, to taste
2 ounces fresh mozzarella, sliced or torn
1 tablespoon fresh oregano, chopped
½ teaspoon whole cumin seeds
Preparation
Wash and chop the chard, green onions, and radishes.
In a skillet, warm a small amount of ghee over medium heat.
Add the green onions, chard, and radishes. Sauté for 3–5 minutes, until the greens soften and the radishes begin to mellow.
Stir in the ground coriander, ground cumin, black pepper, and Pink Himalayan salt. Cook for another minute, then remove the vegetables from the pan and set aside.
In a bowl, whisk the eggs until smooth.
Add more ghee to the pan. Pour in the eggs and sprinkle with cumin seeds and fresh oregano. Allow them to cook until the bottom is set and the top is mostly firm.
Carefully flip the omelet.
Add the fresh mozzarella over the omelet, then spoon the sautéed vegetables onto one side.
Fold the omelet over the vegetables and cook for another 1–2 minutes, until the cheese is soft and melted.
Serve warm with fresh oregano over the top.
