Parsnip, Apple & Leek Sourdough Fritters with Sage and Ginger

Golden parsnip, apple and leek fritters made with sourdough discard, sage and fresh ginger. Creamy and moist inside, crisp outside, with a little sweetness and tartness.

SERVES

About 8 small fritters; yield varies with size

PREP

About 15 minutes

COOK

About 15–20 minutes, depending on batches and thickness

Ingredients
  • 2 medium parsnips, scrubbed or peeled and finely grated (about 2 cups)

  • 1 small tart apple, cored and grated

  • ¼–⅓ cup finely chopped leek, white and light green parts, washed well and dried

  • ¼ cup sourdough discard, stirred down (equal weights flour and water)

  • 1 large egg

  • 1–2 tablespoons all-purpose flour, plus more as needed to bind

  • 1–2 teaspoons finely grated fresh ginger

  • 4–6 fresh sage leaves, finely chopped

  • ¼ teaspoon pink Himalayan salt, or to taste

  • Freshly ground black pepper, to taste

  • Butter, as needed for sautéing and frying; ghee is another option

Optional for serving

Fried or poached eggs.

Instructions
  1. Soften the chopped leek in a little butter over medium-low heat. Set aside to cool slightly.

  2. Place the grated parsnip and apple in a clean kitchen towel and squeeze firmly to remove excess moisture.

  3. Whisk the egg and sourdough discard together. Stir in the ginger, sage, pink Himalayan salt and black pepper, then fold in the leek, parsnip, apple and 1 tablespoon flour.

  4. Let the mixture stand for 5 minutes. It should hold together when pressed into a patty, without liquid pooling underneath. Add the remaining flour, or a little more if needed.

  5. Heat a thin layer of butter in a skillet over medium-low to medium heat. Cook one small tester first, using about 2 tablespoons mixture flattened to roughly ¼ inch thick.

  6. Cook until a golden crust forms underneath, approximately 3–4 minutes, then turn carefully with a wide spatula. Cook the second side until golden and the parsnip is tender and the center is set. Adjust the heat so the butter does not burn before the center cooks.

  7. If the tester spreads or falls apart, add a little more flour. Cook the remaining fritters in batches, leaving space between them and adding butter as needed. Timing varies with fritter size and thickness.

This started with a thought: parsnip and apple fritters with sage and ginger. Leeks and a little sourdough discard joined the bowl, and butter went into the skillet because I was out of ghee.

The result? Creamy, a touch of sweet and tart, moist on the inside and crispy on the outside. Heavenly, LOL. The sage and ginger stayed subtle, and fried eggs made them breakfast.

From the Mixing Bowl to Breakfast
Ayurvedic Perspective

Through an Ayurvedic qualities lens, these warm fritters bring together the sweetness of root vegetables and cooked apple, the richness of butter, and gentle aromatic pungency from leek, ginger and sage. The interior stays moist while the outside becomes crisp.

The warm, moist and grounding qualities may be appealing during cool, dry weather, particularly for Vata. This is a qualities-based interpretation rather than a classical recipe. Their richness and fried preparation call for portions that suit your appetite; the sourness of the apple and discard and the amount of warming seasoning also affect individual tolerance.
