A generous late-summer sauce made by roasting eggplant, tomatoes, peppers, carrots, zucchini, garlic, and basil with coconut oil, cumin, and Hingvastak. Everything is blended into a rich, velvety sauce without adding a drop of liquid.

1 large eggplant, chopped
8 large tomatoes, cored and chopped
Instructions
Preheat the oven to 400°F.
Place the eggplant, tomatoes, peppers, carrots, zucchini, garlic, and basil in a large roasting pan or baking dish.
A Late-Summer Sauce for Whatever the Garden Gives
This sauce came together from the kind of abundance that happens in a late-summer kitchen—tomatoes everywhere, a beautiful eggplant ready to be used, and a few more vegetables waiting nearby. Carrots and zucchini joined the pan, along with peppers, garlic, basil, cumin, and a generous spoonful of Hingvastak.
After roasting, the vegetables had released so much of their own juice that no additional liquid was needed. Everything blended into approximately eight cups of thick, golden sauce: enough for dinner over rice and lentils, with plenty left to tuck into the freezer.
An Ayurvedic Perspective
Roasting and blending transform this assortment of vegetables into something warm, soft, and much easier to digest than the same ingredients served raw. Coconut oil adds moisture, while cumin and Hingvastak bring warmth and aromatic support for digestion.
The finished sauce is particularly grounding for Vata when served warm over rice and well-cooked lentils. Tomatoes, eggplant, garlic, and Hingvastak can all carry heating qualities, so someone with abundant Pitta may prefer a moderate portion or reduce the Hingvastak slightly.
