Ingredients
8 oz homemade tomato sauce or jar
Water, enough to generously cover vegetables and create a brothy consistency
Spaghetti, broken in half or thirds (amount to preference for 2 servings)
1 small carrot, grated
1 small zucchini, grated
Small piece of celeriac, grated
1 Green garlic, chopped
2 Green onion, chopped (plus extra for garnish)
Fresh oregano, chopped
Arugula, for serving
Avocado, sliced or diced for topping
Ghee or olive oil
Pink Himalayan salt, to taste
Cumin, to taste
Pippali, to taste
Directions
In a medium pot, warm a little ghee or olive oil over medium heat. Add the chopped green garlic, green onion, oregano, cumin, and pippali. Sauté briefly until fragrant.
Add the shredded carrot, zucchini, and celeriac. Cook for several minutes until the vegetables begin to soften and melt into the mixture.
Stir in the homemade tomato sauce and enough water to create a light, brothy consistency. Season with Pink Himalayan salt.
Bring to a gentle simmer and add the broken spaghetti directly into the broth. Simmer until the pasta is tender, stirring occasionally to prevent sticking.
To serve, place fresh arugula in the bottom of each bowl. Ladle the brothy spaghetti mixture over the greens, allowing them to gently wilt.
Finish with sliced avocado, additional green onion, and an extra sprinkle of pippali if desired.
