Mustard Greens

Mustard greens are pungent, warming leafy greens that stimulate digestion, circulation, and detoxification. Especially beneficial in spring, they help clear stagnation and reduce excess Kapha in the body.

Mustard Greens | The Fiery Spring Activator

Mustard greens carry a bold, unmistakable energy. With their pungent and bitter tastes, they actively stimulate agni (digestive fire), increase circulation, and help break up stagnation in the body. In Ayurveda, they are considered one of the more heating and activating leafy greens, making them especially useful during the damp, heavy qualities of spring.

Where heavier greens may gently cleanse, mustard greens ignite movement.

They are particularly beneficial for Kapha, helping to clear excess mucus, support the respiratory system, and awaken sluggish digestion. This makes them a powerful ally during seasonal transitions, especially for those experiencing congestion, allergies, or a sense of heaviness.

Because of their sharp, heating nature, mustard greens can be intense. In excess, they may aggravate Pitta, contributing to heat or irritation, and can also increase Vata if not properly prepared due to their light and drying qualities.

Preparation, as always, is key.

Cooking mustard greens helps soften their intensity while preserving their activating benefits. Sautéing in ghee with spices like cumin, coriander, or even a touch of fennel can bring balance, while a squeeze of lemon at the end adds brightness and supports digestion.

As you begin harvesting these from your garden, you may notice their potency immediately—they are not a passive green. They ask to be worked with, balanced, and respected.

And when you do… they can be incredibly invigorating.

JenZen Kitchen Note:

I like to sauté mustard greens in ghee with digestive spices and finish with lemon to soften their sharpness while keeping their vibrant, activating quality.

JenZen Principle:

Some foods awaken—mustard greens remind us that stimulation, when balanced, can be a powerful form of healing.
