Ingredients

  • 2 ripe peaches, diced

  • 2 medium ripe tomatoes, diced

Directions

  1. Add the diced peaches, tomatoes, red onion, and sweet pepper to a medium bowl.

  2. Add the chopped fennel fronds and grated ginger.

This recipe came together almost by accident—and surprised me completely.

I am not generally a salsa person, but late summer had other plans. Ripe peaches and garden tomatoes came together with red onion, sweet pepper, fresh fennel fronds, lime, and ginger to create something juicy, bright, and deeply satisfying.

The peaches soften the acidity of the tomatoes while the fennel adds a gentle aromatic sweetness that makes the whole bowl feel fresh and a little different from a traditional salsa. There is no cilantro and no jalapeño here, making this version mild, fragrant, and very easy to keep eating.

It is one of those recipes that tastes exactly like the season it came from.
