Slow-simmered chicken bone broth carries the sweet and salty tastes and embodies qualities that are heavy, oily, soft, and deeply nourishing. It is one of the most grounding kitchen medicines we can prepare — especially when made slowly with bones, connective tissue, aromatic vegetables, and warming spices. The long cooking process draws out minerals, collagen, and gelatin, creating a rich, restorative liquid that supports tissues, joints, and digestion.


For Vata, it is profoundly stabilizing — warming, moistening, and rebuilding after depletion, illness, travel, stress, or seasonal transitions. For Pitta, it soothes when digestion has been overworked or inflamed, especially when prepared without excessive spices. For Kapha, however, the heaviness can be too much in excess; keeping it lighter with more ginger, black pepper, or greens helps maintain balance.


Preparation matters. A long, gentle simmer (12–24 hours) creates deeper nourishment and easier digestibility. Adding apple cider vinegar helps draw minerals from the bones. Skimming excess fat can lighten it for those who feel sluggish. Sipping it plain supports weakened digestion, while using it as a base for kitchari, soups, or stews builds strength more substantially.
