
Garden Harvest Beef & Barley Soup
A deeply warming beef and barley soup filled with garden vegetables, slowly simmered in chicken bone broth and finished with JenZen Basic Roasted Tomato Broth.

Ingredients
• 1½ pounds beef
• 4 tablespoons ghee
• 1 tablespoon dried oregano
• 1 tablespoon coriander
• 1 tablespoon cumin seeds
• 1 teaspoon freshly grated turmeric
• 1 large onion, chopped
• 1 large green pepper, chopped
• 1 cup chopped carrots
• 1 cup chopped celery
• 2 medium tomatoes, peeled and chopped
• 1½ cups chopped cabbage
• 1 large summer squash, chopped
• 2 quarts chicken bone broth
• ¾ cup barley
• 1 pint JenZen Basic Roasted Tomato Broth
• Salt and black pepper, to taste
Instructions
1. Warm the ghee in a large soup pot over medium-low heat.
2. Add the oregano, coriander, cumin seeds, and freshly grated turmeric. Bloom the spices in the ghee for a few minutes, stirring gently, until fragrant.
3. Add the onion and green pepper. Cook for a few minutes, until they begin to soften.
4. Add the beef, carrots, celery, tomatoes, cabbage, summer squash, chicken bone broth, salt, and black pepper. Stir well and cook slowly for approximately 1 hour.
5. Add the barley and continue cooking slowly for approximately 1 additional hour, until the beef and barley are tender.
6. If the barley absorbs more liquid than you would like, stir in the pint of Basic Roasted Tomato Broth. Simmer gently until the soup reaches a rich, brothy consistency, then taste and adjust the seasoning before serving.
This deeply warming soup brings beef, barley, and an abundant mix of late-season vegetables together in one generous pot. Homegrown cabbage and summer squash join onions, green pepper, carrots, celery, and tomatoes in a broth made rich with ghee and fragrant spices.
