Ingredients
Spiced Ghee Granola
4 tbsp ghee
Instructions
1. Start the Granola First
Melt 4 tablespoons of ghee in a cast iron skillet. Stir in oats, chopped almonds, sesame seeds, cinnamon, cumin, and fresh ginger. Spread evenly and bake at 350°F until lightly golden and fragrant, stirring once or twice for even browning. When finished, drizzle with 1 tablespoon brown rice syrup and gently toss. Set aside to cool.
In Ayurveda, this colorful bowl is especially suited to late fall and winter, when the body naturally seeks warmth, moisture and grounding nourishment. Butternut squash and apple bring sweet, stabilizing qualities that calm Vata and nourish the tissues, while fennel and fresh ginger support agni without overwhelming the dish with heat. Ghee carries the warmth and aroma of the spices throughout the meal, and the roasted vegetables gently soften the fresh spinach beneath them. Caramelized onions deepen the sweetness, while lemon zest and juice add a bright finish that awakens the senses and keeps the bowl from feeling too heavy.
Butternut squash provides beta-carotene, while apples contribute fiber and pectin to support digestion. Almonds, sesame seeds and ghee add satisfying fats, protein and minerals, and spinach offers folate, magnesium and vitamin K. Together, the fiber-rich vegetables, warming spices and crunchy granola create a substantial plant-forward meal with layers of flavor, texture and steady nourishment.

JenZen Note:
This bowl may look elaborate, but each part can be prepared ahead. I often make extra spiced granola and roasted vegetables so the next meal comes together with very little effort. It is also wonderfully flexible—serve it as breakfast with an egg, enjoy it for lunch as written, or pair it with soup for a grounding autumn dinner.
