
Garden Vegetable & Egg Fried Rice with Lemon-Ginger Tahini Dressing
A colorful, deeply satisfying fried rice made with 2 eggs, 1/2 cup rice and a generous panful of garden vegetables. Cumin seeds, fresh ginger and fresh turmeric bring warmth, while a creamy lemon-ginger tahini dressing and fresh lime brighten every bite.

For the Garden Vegetable & Egg Fried Rice
1/2 cup basmati rice, cooked and cooled
2 eggs, lightly beaten
1 tablespoon ghee
3 to 4 cups chopped garden vegetables, such as broccoli, summer squash, peppers and bok choy
1 teaspoon cumin seeds
1 tablespoon freshly grated ginger
1 teaspoon freshly grated turmeric
Freshly ground black pepper, to taste
For the Lemon-Ginger Tahini Dressing
2 tablespoons tahini
Juice of 1/2 lemon
1 to 2 teaspoons ginger syrup, to taste
Warm water, as needed to thin
1/2 lime, for serving
Warm the ghee in a large skillet over medium heat. Add the cumin seeds and cook until fragrant.
Add the fresh ginger and turmeric. Stir briefly, just until aromatic.
Add the broccoli, summer squash, peppers and bok choy. Cook, stirring often, until the vegetables are tender but still lively.
Move the vegetables to one side of the skillet. Pour the beaten eggs into the open side and cook gently, stirring, until softly set.
Add the cooked rice and fold everything together. Season with black pepper and warm through.
Whisk the tahini, lemon juice and ginger syrup together. Add warm water a little at a time until the dressing is creamy and pourable.
Serve the fried rice warm with the dressing and fresh lime alongside.
